Simple Vinaigrette (French Dressing)

Makes 3/4 cup

1/4 cup white wine vinegar or herb vinegar
1 Tablespoon lemon juice (fresh squeezed)
1/4 teaspoon dry mustard or 1 teaspoon prepared Dijon mustard
Salt and fresh-ground black pepper
1/2 cup olive oil


Mix together the vinegar, lemon juice, mustard, salt and pepper. Add olive oil, a little at a time, beating with a whisk until the mixture emulsifies. This sauce may also be made in the blender. Put all the ingredients in the container and blend at high speed for a very short time.
