Chilled Cucumber Soup

Serves 3-4

1 cucumber, peeled & cut into chunks
2 cups plain yogurt
2Tablespoons heavy cream
8 sprigs mint
2-3 teaspoons wine vinegar
Salt & pepper
1 cup green grapes
8 thin slices of radish
4 dill leaves or mint leaves


Put the cucumber into a blender with the yogurt, cream and grapes. Blend until smooth. Add enough wine vinegar to sharpen the flavor and salt and pepper to taste. Chill. Serve in chilled bowls garnished with the radish slices and the dill or mint leaves.
