Black Bean & Tomato Gazpacho

Serves 4 - 6

3/4 cup dried black beans (1 1/2 cups cooked)
2 medium tomatoes, chopped
1 small mild red or white onion chopped, or 4 scallions, chopped
1 red bell pepper, diced
1 cucumber, peeled, seeded and diced
1 tablespoon minced cilantro
1 teaspoon hot pepper sauce or a small jalapeño pepper
1 tablespoon wine vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 cups canned tomato juice, chilled


Cook the beans by your preferred method. Combine the tomatoes, onions, peppers, cucumber cilantro, hot pepper sauce, vinegar, salt and pepper in a blender or food processor. Pulse 10-15 seconds, or until finely chopped. Transfer to a large bowl and stir in the beans and tomato juice. Chill at least 1 hour before serving.

Try adding 1 Tablespoon Worcestershire sauce
1/2 lemon
1 teaspoon garlic


Put this in the blender and process with the other vegetables.
